CHICKEN BIRYANI

CHICKEN BIRYANI

INGREDIENTS:
1 kg Rice,
1 kg Chicken,
3 Medium Sized Onions,
8 Cloves,
1 tbsp Red Chilies Powder,
8-10 Pepper Corn,
3 Brown Cardamom,
2 Green Cardamom,
1 1/2 tbsp Salt,
2 Cup Yogurt,
1/2 tsp Turmeric Powder,
2-3 pieces Cinnamon,
1/4 tsp Yellow Food Color,
2 Garlic,
2" Ginger,
8 Medium Sized Tomatoes,
12 Green Chilies,
8-10 Plum,
25 gm Tamarind,
1 1/2 Cup Cooking Oil.

for TOP Layer
3 tbsp Chopped Green Coriander,
3 tbsp Chopped Mint Leaves,
4 Sliced Green Chillies,
2 Sliced Lemons.


PREPARATION:
Put Peeled Garlic, Ginger, Tomatoes, Yogurt and Green Chilies in the jug of a blender. Blend them to a uniform mixture. Take a wok. Put it on burner at low medium flame. Put Cooking oil in it and Finely Sliced Onions. Fry these for their Golden Color. Fry the Chicken in it till color is brown.  Add Cloves, Pepper Corn, 1 tbsp Salt, Red Chilies Powder, Brown Cardamom, Cinnamon , Green Cardamom and Yogurt Mixture. Fry it till it starts leaving Oil. Add Plum and Tamarind. Fry it for 2-3 minutes. Put this Chicken mixture aside.
Soak the Rice after cleaning and washing in water for 30 minutes. Now, take a wok. Add 1/2 tbsp Salt in 3-4 Glass Water. Boil the Rice to half cooked. Drain out the water. Now, make alternate  layers of Rice and Chicken mixture. On top of the layer sprinkle Chopped Green Coriander and Mint Leaves, Sliced Green Chilies and Sliced Lemons. Mix Food Color in 1/2 Cup of Water and sprinkle it on the Rice. Put the Wok on burner at low flame for 30 minutes. SINDHI BRIYANI is ready.
