NAWABI BIRYANI

 NAWABI BIRYANI

INGREDIENTS:
500  gm Basmati Rice,
500 gm Mutton ,
1 tbsp Ginger-Garlic Paste,
1 tsp Mixed Spices,
3 small-sized Red Chilies,
1/2 cup Curd,
3 Green Cardamom,
5 Black Pepper,
3 Onions (Sliced),
5 Cloves,
1/2 tsp Cumin Seeds,
1 piece Cinnamon,
1/2 tsp Turmeric Powder,
 1 pinch Mint (Chopped),
 5 Apricots,
 100 gm Cashew Nuts,
100 gm Resins,
100 gm Almonds,
1/2 cup Cooking Oil,
1/2 tsp salt. you can increase / decrease as per your taste.

   

PREPARATION:
Fry the dry fruits & Apricots in 2 tbsp Cooking Oil, with a little Salt.  Now, grind the fried onions and Red Chilies, to make a fine paste. Marinate the mutton pieces with Curd, Ginger-Garlic Paste, Onion Paste, Turmeric Powder and Salt. In a pressure cooker, heat Cooking Oil, add the marinated Mutton and cook 30 minutes or till done. Heat Cooking Oil again in another pot, add the Whole Spices. Fry for a while and then add the Washed Rice. Add salt and warm water, enough that it comes 1½ inch above the rice. Cook till the Rice is done. Remove the rice from the pan, spread out to cool and remove the Whole Spices. To assemble, apply Cooking Oil to a heavy bottomed vessel, add the cooked Mutton and sprinkle some Mixed Spices. Cover with a layer of rice, followed by layer of Cooking Oil. Lastly, add the fried nuts, cover tightly and keep on dum for 15-20 minutes at low flame.Mix and serve, hot garnished with Chopped  Mint. NAWABI BIRYANI is ready to serve.
