BEST BREAKFAST BURRITO


INGREDIENTS:
2 tbsp Coconut Oil,
1 package of vegan Field Roast Sausage
1 small Onion, Chopped

1 Green Bell Pepper,Chopped
500 gm Red Lentils
2-1/2 cups water
1 tsp Salt for the Lentils
250 gm Mushrooms, sliced.






PREPARATION:
Your favorite salsa. 10 Whole Wheat Soft Tortillas. Let's cook the lentils first. Put the lentils and Salt in a large saucepan. Add the Water to cover the top of the Lentils. Bring to a boil and cover the pot. Turn down to medium low heat. Cook 25 minutes or until liquid is absorbed and the Lentils are Tender. Taste to see if the texture is done but not mushy. Set Lentils aside. In the meantime; Heat the Oil in a skillet to medium high heat. Brown the Sausage on all sides. Set aside. If there is still Oil in the pan go ahead and add you Onion and Bell Pepper to the pan. If the pan is dry add a little bit more oil. Saute until the onion is translucent and the Peppers and Onions are turning a bit Brown. Remove from the pan and set aside. Add the sliced Mushrooms to the same skillet and saute for about 15-20 minutes. Quite a bit of liquid will cook out of them. Cut up the "Sausage" into small chunks. You will have a lot more, of everything. Now place some Lentils, Bell Peppers, Onion, Mushrooms, "Sausage" and Salsa down the center of a Tortilla. Fold in each side to keep the ingredients from falling out and roll up the Burrito. Heat each burrito in the microwave for 15-20 seconds.BEST BREAKFAST BURRITO is ready to serve.
