CARROT BARLEY

CARROT BARLEY 

INGREDIENTS:
250 gm Baby Carrots,
2 tbsp Butter,
1 Cup Barley Pasta,
2cup  Cup Water,
1 1/2 Low Sodium Vegetable Broth,
1 Garlic Clove,
1/4 Cup Parmesan Cheese,
4 Chopped Green Onions,
1 Sprig of Fresh Rosemary,

2 tsp Black Pepper Powder.


PREPARATION:
Chop the baby carrots in your food processor, using the pulse option. Melt the butter in a large sauté pan over Medium Flame. Add the Barley and Carrots and sauté for about 4 to 5 minutes. Add Water, Broth and Minced Garlic. Cook, uncovered, until the liquid is absorbed into the pasta, about 15-20 minutes. As the last bit of liquid is absorbed, stir in the Parmesan Cheese and Green Onions. Season with Salt and Black Pepper, to taste. Garnish with Rosemary.  CARROT BARLEY is ready to serve.
