ROAST SPICED CHICKEN

ROAST SPICED CHICKEN

INGREDIENTS:
1 kg Chicken,
2 tsp Ground Cumin Seeds,
1 tsp Ginger,
1/2 tsp Cinnamon Powder,
1/2 tsp Cayenne Pepper,
1 pinch Nutmeg,
1 pinch Salt
1 pinch Black Pepper
1 Lemon,
8 Cloves Garlic
2 tbs Butter, melted

PREPARATION:

Stir together Cumin Seeds, Ginger, Cinnamon Powder, Cayenne Pepper, Nutmeg, Salt and Black Pepper. Pat Chicken dry; rub all over with spice mixture. Cover and refrigerate for 2 hours.Remove Giblets and Neck (if any) from Chicken. Place Lemon and Garlic in cavity; tuck wings under back. Set chicken on rack in roasting pan. Bake it at 180C for 35-40 minutes. ROAST SPICED CHICKEN is ready to serve.
