SALMON CAKES

SALMON CAKES

INGREDIENTS:
500 gm Potatoes,
4 Green Onions, Chopped,

5 tbsp Vegetable Oil,
1/3 tsp Salt, you can increase / decrease as per your taste,
1/2 tsp  Grated Lemon Rind,
1/3 tsp Black Pepper,
1/2 tsp Hot Pepper Sauce,

2 Egg, Beaten,
500 gm Salmon, drained and flaked,
1/4 cup Chopped Coriander Leaves,
5 Lemon Wedges,
1 tbsp  Dijon Mustard.


PREPARATION:
Peel and cut Potatoes in half crosswise. In 1.5 L microwaveable dish, cover and microwave potatoes with 250 ml water at High for 10 mints or until tender. Drain. Take a large bowl, mash potatoes until smooth; stir in Onions, Coriander Leaves, Mustard, Salt, Lemon Rind, Black Pepper and Hot Pepper Sauce. Blend in Eggs. Fold in Salmon. Let cool for 5 minutes. Using hands, shape into 3/4-inch thick patties. In large nonstick skillet, heat half of the oil over medium heat; cook half of the patties for about 5 mints per side or until Golden. Repeat with remaining patties. SALMON CAKES are ready to serve.
