CHICKEN & WHITE BEANS SALAD

CHICKEN & WHITE BEANS SALAD


INGREDIENTS: 
500 gm Cannellini or other White Beans, rinsed and drained,
2 1/2 cup Diced Cooked Chicken Breast,
6 tbsp Fresh Orange Juice, plus more to taste,
1/4 cup Vinegar,
1 tbsp Dijon Mustard,
1 clove Garlic,
1 tsp Salt, You can increase/decrease as per your taste,
1 tsp ground Black Pepper,

2 cup  Romaine Lettuce,
2 cup Torn Radicchio Leaves,2 cup Diced Zucchini,
1 1/2 cup Diced Celery,
1/4 cup finely diced Feta Cheese,
1/3 cup chopped, well-drained, oil-packed sun-dried Tomatoes,
1 cup coarsely chopped fresh Basil, plus whole Basil Leaves for Garnish,
5 tbsp Extra-Virgin Olive Oil.



PREPARATION:
Peel the Garlic and smash with the side of a chef's knife. Using a fork, mash the Garlic with 1/4 tsp Salt in a small bowl to form a coarse paste. Whisk in Olive oil. Add Orange Juice, Vinegar, and Mustard; whisk until well blended. Taste and whisk in up to 4 tbsp more Juice to mellow the flavor; season with more Salt, if desired. Set aside at room temperature. Combine Beans, Chicken, Zucchini , Celery, Cheese, and sun-dried Tomatoes in a large bowl until well blended. Add Chopped Basil and 3/4 cup above mentioned mixture; toss until combined. Taste and season with Salt and Pepper.Toss the remaining Mixture with Romaine and Radicchio in a medium bowl. CHICKEN & WHITE BEANS SALAD is ready to serve. Serve the salad on the greens, garnished with fresh Basil Leaves.
