PAINTED DESSERT CHICKEN

PAINTED DESSERT CHICKEN

FOR THE MARINATE:
1/2 cup Olive Oil
1/2 cup Lemon Juice
1 Garlic Clove Minced
1 tsp Sugar
1/2 tbsp Salt
1 tbsp Chili Powder
4-5 tbsp Coriander Leaves

INGREDIENTS:

2 Skinless Boneless Chicken Breasts
100 gm Shredded Lite Mozzarella

1 cup Sliced Mushrooms
1 cup Sliced Zuchinni
1/2 cup  Green Bell Pepper sliced
1/2 tsp Salt
1/4 tsp Black Pepper
1 cup Ragu Super Chunky Mushroom Pasta Sauce
200 gm  Whole Wheat Pasta

 

PREPARATION:
Whisk together the Marinade ingredients. Place Chicken in Marinade overnight. Discard the Marinade. Bake or grill Chicken at 375 F for 30-40 minutes or until chicken reaches 170 degrees. Meanwhile cook pasta according to package directions. Saute Bell Peppers and Zuchinni in a frying pan coated in cooking spray. Add a little Water and cover with a lid for a few minutes. Remove lid and stir fry until the Peppers and Zuchinni are slightly tender. Add Mushrooms and stir fry until the Mushrooms are cooked. Add Salt & Black Pepper. Top  Pasta and 1 piece of Chicken with the 1/2 of the Vegetables, 1/2 cup Heated Pasta Sauce, and Mozzarella.  PAINTED DESSERT CHICKEN is ready to serve.
