PEA & MINCE RICE STUFFED PEPPERS


PEA & MINCE RICE STUFFED PEPPERS

INGREDIENTS:
500 gm Lamb Mince
2 Onion Finely Chopped
1 tbsp Grated Ginger
3-4 Garlic Cloves - Finely Chopped
1 tbsp Cumin Seeds
1 tbsp Coriander Seeds - crushed
1 tsp Mustard Seeds
1 tbsp Chilli Flakes
1 tbsp Mango Powder
1 tbsp Chaat Masala
1 tsp Mixed Spices Powder
1 tsp Red Chilli Powder
2-3 Green Chillies - finely chopped
1 tsp Salt you can increase / decrease as per your taste
1 Cup Green Peas
2 tbsp Concentrated Tomato Paste
1/2 Cup Water
1-2 Cup Cold Boiled Rice
1/4 Cup Oil
10 Green Pepper
4-5 tbsp Coriander Leaves to Garnish






PREPARATION: 
Add all the items in a bowl and mix well with your hands making sure its all mixed well. Leave in fridge to marinade for overnight. Heat Oil in a non stick pan and add the Mince and Peas and cook on low/medium heat till all the Water that the Mince leaves has evaporated and Oil separates. Next add the Tomato Paste and cook for 2-3 minutes. Next add Water and mix well and cook till added Water has been evaporated. Add the Rice and mix well and remove off heat. Cut a Pepper so that the top is removed and clean the inside & wash it. Fill the Rice Mince mixture in the empty Pepper. Add in a preheated oven for 15-20 minutes and PEA & MINCE RICE STUFFED PEPPERS is ready to serve.
