CREAMY CHICKEN ENCHILADAS



CREAMY CHICKEN ENCHILADAS


INGREDIENTS:
1 tbsp. Butter,
125-150 gm Can Chopped Green Chiles (Drained),
1 Onion (Chopped),
8-ounce Package Cream Cheese, cut up and softened,
8 Flour Tortillas,
3 1/2 cups Chicken Breast (Chopped Cooked),
16 ounce Packages Monterrey Jack Cheese, (shredded),
2 cups Whipping Cream,

PREPARATION:
Melt Butter in a large skillet over medium heat. Add Onion and sauté for 5 minutes. Add Green Chiles; sauté for1 minute. After that Stir in Chicken and Cream Cheese; cook, stirring perpetually, till Cream Cheese Melts. You will need to Spoon 2 to 3 tbsp. Chicken Mixture down center of each Tortilla. Roll up Tortillas, and place, seam side down, in a lightly greased Baking Dish. Sprinkle with Monterrey Jack Cheese, and drizzle with Whipping Cream. Bake at 350° for 45 minutes. CREAMY CHICKEN ENCHILADAS are ready to serve.
