QUICK CHICKEN MOLE



QUICK CHICKEN MOLE
INGREDIENTS:
2 tsp. Olive Oil
1 medium Onion (Chopped)
2 cloves Garlic (Crushed with Press)
2 tsp. Chili Powder
2 tsp. Unsweetened Cocoa
1/4 tsp. Cinnamon (Ground)
1 1/4 cup Chicken Broth
1 tbsp. Creamy Peanut Butter
1 tbsp. Tomato Paste
1/4 cup Golden Raisins
1000 – 1250 gm. Chicken (Cut into 8 pieces, Skin removed)
1 Lime wedges for garnish

PREPARATION:
In a nonstick, heat Oil over medium heat until hot. Add Onion and cook 5 minutes, stirring occasionally. Add Garlic, Chili Powder, Cocoa, and Cinnamon; cook 1 minute, stirring constantly. Add Chicken Broth, Peanut Butter, and Tomato Paste and stir it occasionally. Add Raisins; heat to boiling. Add Chicken pieces to skillet. Reduce heat to medium-low; cover and simmer about 5 minutes to blend flavors, turning Chicken pieces over halfway through cooking to coat all sides with Sauce. Sprinkle Chicken with Cilantro. QUICK CHICKEN MOLE is ready to serve. Serve Chicken and Sauce over Rice with Salad. Garnish with Lime Wedges.
