HOT & SPICY DUM ALOO



INGREDIENTS:

6 Potatoes medium sized (Boiled & Peeled. Poke a few holes in the Potatoes with a fork, and cut into halves).

1 Onion (Make a Paste of the Onion)

½ tsp. Garlic Paste

1 tsp. Ginger Paste

1 Bay leaf

½ tsp Cumin Seeds

½ tsp Salt

1tsp Sugar

2-3 Green Chilies (Broken)

½ tsp Turmeric Powder

2 tsp Fresh Coriander Leaves (Finely Chopped)

1/4 tsp mixed All Spices powder

4-5 tbsp. Mustard Oil

½ Lemon Juice



PREPARATION:

Heat Olive Oil in a deep frying pan. Tamper with Bay Leaf & Cumin Seeds, once it splutters add the Grated Onion & cook till Light Brown in color. Next add the Ginger & Garlic Paste, mix & fry for a minute. Add Dum Aloo Masala, Turmeric Powder, and Salt, Green Chilies. Mix well. Fry this on medium heat till the Masala starts leaving Oil. Now add the boiled Potatoes. Mix well with the Masala & fry for 4-5 minutes on medium heat. Add 1 cup of Water, Mix & Cook uncovered on low flame till the raw smell of Masala goes. The Gravy will be thicker, so stir in between to prevent from burning or sticking to the bottom of the pan. Add Sugar, mix & cook for another 2-3 minutes. Add Lemon Juice & Mixed All Spices Powder, mix & remove from heat. Garnish with Coriander Leaves. HOT & SPICY GUM ALOO is ready to serve.
